This creamy, delicious and protein packed dish is one that is super easy to make and perfect for weeknight meals. It uses pantry ingredients that you most likely have lying around, making it ideal for busy individuals. It’s so saucy and the perfect comfort food that you can feel good about consuming. I love pairing this with some Cauliflower Rice since the flavor really complements this dish. This can also be served over rice or pasta. Now let’s get cookin’!
-1 large Yellow Onion, diced
-3 tsp f Olive Oil
-4 tsp of minced Garlic
-1 tsp Salt
-1 tsp Black Pepper
-Pinch of Sugar
-1 tsp of Balsamic Vinegar
-1 tsp Italian Seasoning
-1 tsp of Smoked Paprika
-1 pound of shrimp
-1/2 cup of Milk
-2 cups of your favorite broth (I used Chicken)
-3/4 a cup of Sun Dried Tomatoes
-2 tsp of Tomato Paste
1). In a large pan, on medium high heat, sear your shrimp. You’ll want to just get some color on them to add flavor. The shrimp will cook further in the sauce at the end.
2). After you have seared your shrimp, transfer the shrimp to a plate.
3). In the same pan, on medium heat, add in the olive oil, spices and chopped Onion.
4). Once the onion has softened, add in the minced garlic and allow it to cook for about 30 seconds, stirring frequently.
5). Once the garlic has became fragrant, add in the tomato paste and let that toast for about a minute in the pan.
6). Then add in your Broth, Milk, and Sun Dried Tomatoes. Allow this to cook for about 10 minutes, after 10 minutes, add in the shrimp.
7). Cook the shrimp sauce for another 5 minutes.
8). Garnish with Parsley or Cilantro and Enjoy 🙂
