These stuffed peppers are packed with a whole lot of flavor and are so nutritious. I love the fact that these can be loaded with whatever your taste palette desires and are super easy to make, making these the perfect weeknight meal. The peppers get roasted in the oven as the ground meat gets cooks on a skillet. So simple and so easy! Let’s get cookin!
-1 pound of ground beef, chicken or turkey
-1 tsp of garlic
-1 tsp of salt
-1 tsp of black pepper
-1 tsp of smoked paprika
-1 tsp of onion powder
-1 tsp of cumin powder
-1 minced onion
-4 bell peppers, halved and cored
-1 can of corn kernels
-1 can of black beans
-1 can of diced tomatoes
1). Pre heat your oven to 425 degrees Fahrenheit.
2). Cook your ground beef alongside the spices and chopped onion on medium high heat. Use the back of your wooden spoon to break it into small pieces as it cooks.
3). While your ground meat cooks, massage a little bit of oil onto your bell pepper halves and place them in the oven for 20 minutes.
4). Brown your meat and add in your canned corn, beans and diced tomatoes. Cook this for about 15 minutes.
5) Spoon in your mixture into your bell pepper halves and sprinkle with your favorite cheese (optional).
6). Place back into the oven for about 10 minutes and then enjoy 🙂
