Mango Salsa Chicken

This recipe is the perfect summer recipe! The sweet, succulent mango tossed in a lime dressing is paired with fresh flavors and served atop a sweet and spicy chicken breast creating a perfect balance of savory, sweet and fresh flavors. This recipe is healthy and a fun way to eat chicken. It transforms the taste of boring chicken breast so something much more delicious. This can be served atop of tortillas and turned into tacos , over fresh greens, or served alongside some rice. It is super easy to make and comes together in a flash! I highly recommend doubling the Mango Salsa recipe and it eating it alongside with some tortilla chips!

Ingredients:

Mango Salsa:

  • 2 Mangos – cubed and peeled
  • 3 tsp of Lime juice
  • 1/2 bunch of Cilantro
  • 2 Green Onion clusters, thinly sliced
  • 1 Serrano/ Jalapeno Pepper
  • 2 Roma tomatoes- finely chopped
  • 1 Red Onion- finely chopped
  • 1 tsp of Salt
  • 1 tsp of Black Pepper
  • 1 tsp of Cumin
  • 1 tsp of minced Garlic

Chicken :

  • 3 chicken breasts, butterflied or sliced thin (if making tacos)
  • 1 tsp of brown sugar
  • 1 tsp of soy sauce
  • 1 tsp of red chili powder
  • 1 tsp of black pepper
  • 1 tsp of garlic powder
  • 1 tsp of lemon juice
  • 1 tsp of cumin (Cumin might sound weird here but just trust me on this!)

Directions:

1). Marinate your chicken breast with all of the chicken ingredients for a minimum of 30 minutes to over night.

2). After marinating your chicken, add some oil into a hot frying/ cast iron pan and cook your chicken in batches on medium heat.. Make sure not to overcrowd your pan or else your chicken will end up steaming and won’t develop a sear. Make sure to flip your chicken once it is halfway cooked through and has developed a sear. Once my chicken has been seared on both sides, I like to place a lid on the pot and allow the steam that will get accumulated to fully cook the chicken on the inside.

3). While your chicken is cooking, work on making your salsa. I like to hand chop everything versus using a food processor because I like to create the texture of pico de giallo vs a smooth salsa. If you would like the consistency of a smooth salsa, then add all of your ingredients to a food processor. Once you have mixed everything, make sure to season to taste (add more salt or lime juice).

4). Plate your chicken and top it off with your mango salsa and enjoy!
