Motichoor Ladoo Recipe

This is my family recipe of Motichoor Ladoo’s. I had found out recently that my mom knew how to make these and I HAD to get the receipe. She and my Naani (my maternal grandmother) had made these in big quantities to pass out around the village when my cousin Ali was born.

This recipe is surprisingly easy and the best part about making it at home is that you can customize it to your liking! If you would like it less sweet, then you can add less sugar or you can substitute the sugar with a sugar substitute (i.e. Splenda/ Erythritol). If you have a nut allergy, you don’t need to add nuts and you can infuse it with whatever flavors you’d like!

Ingredients

-Nuts : Almonds and pistachios are typically used

Bhoondhi:

-1 cup of Besan (Gram Flour)

-2 cups of Water

Sugar Syrup

-1 cup of sugar

-1/2 cup of water

-2 cardamon pods (elaychi)

Directions

-Warm up your oil on high and once it gets heated up , lower the flame to med-high while frying the bhoondhi.

-Place all of the ingredients for the sugar syrup in a large saucepan and you’ll want to cook this on medium heat for about 5 minutes. Turn off the flame once your sugar syrup has thickened. You can add other ingredients such as lemon juice, rose water, or orange blossom syrup to customize this recipe to your tastebuds!

-To make the bhoondhi, whisk together the gram flour and water until a smooth flowy paste forms.

-Spoon the mixture onto a mandarin strainer over the hot oil. Do this in batches so that all of the fried bhoondhi don’t clump together. You’ll want to fry these for only about a minute, just so that the outer exterior crisps up. After you take the fried bhoondie out of the oil, place them on a plate lined with paper towels.

-Once you have fried all of the bhoondie, pour it into the saucepan that contains the sugar syrup and mix and cook this mixture on low flame for about one minute.

-Then turn off the flame and cover it with a lid and leave it for 20 minutes.

-After 20 minutes, you’ll want to transfer this mixture onto a plate and let it cool completely.

-Once it cools completely, add in the nuts of your choice and use both hands to squeeze the mixture so that some it breaks down. It’ll be a sticky process but just bear with me, you’re almost there!

-Then create balls and let them set for about 10 minutes and then Enjoy!

-You can store these in an airtight container in the fridge and it’ll last a week!
